- 1 pound ground beef or Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can (28 oz) crushed tomatoes
- 6 cups beef broth (or chicken broth)
- 2 teaspoons Italian seasoning
- Salt and pepper, to taste
- 8–10 lasagna noodles, broken into pieces
- 1 cup fresh spinach or kale (optional)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley for garnish
Instructions
- Brown the Meat: Heat olive oil in a large pot over medium heat. Add ground beef or sausage and cook until browned, breaking it apart as it cooks. Drain excess fat.
- Add Aromatics: Stir in diced onion and cook until softened, about 3–4 minutes. Add garlic and cook for 1 minute.
- Season and Add Tomato Paste: Stir in tomato paste, Italian seasoning, salt, and pepper. Cook for 1 minute to deepen flavor.
- Add Tomatoes and Broth: Pour in crushed tomatoes and broth. Stir well and bring to a simmer.
- Add Pasta: Add broken lasagna noodles. Simmer 15–20 minutes, stirring occasionally, until noodles are tender.
- Add Greens: Stir in spinach or kale during the last 5 minutes if using.
- Make Cheese Topping: In a bowl, mix ricotta, mozzarella, and Parmesan.
- Serve: Ladle soup into bowls and top with a spoonful of the cheese mixture. Garnish with fresh basil or parsley.
Notes
For a creamier soup, stir in a splash of heavy cream at the end. Add red pepper flakes for heat. Store leftovers without pasta for best texture.
