Description

This Lasagna Soup brings all the comforting flavors of classic lasagna into one warm, cozy bowl. Packed with tender pasta, a rich tomato broth, savory meat, Italian herbs, and a creamy three-cheese topping, this easy one-pot meal is perfect for busy nights. It tastes like slow-cooked lasagna but comes together in under 40 minutes.

  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 6 cups beef broth (or chicken broth)
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 810 lasagna noodles, broken into pieces
  • 1 cup fresh spinach or kale (optional)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Brown the Meat: Heat olive oil in a large pot over medium heat. Add ground beef or sausage and cook until browned, breaking it apart as it cooks. Drain excess fat.
  2. Add Aromatics: Stir in diced onion and cook until softened, about 3–4 minutes. Add garlic and cook for 1 minute.
  3. Season and Add Tomato Paste: Stir in tomato paste, Italian seasoning, salt, and pepper. Cook for 1 minute to deepen flavor.
  4. Add Tomatoes and Broth: Pour in crushed tomatoes and broth. Stir well and bring to a simmer.
  5. Add Pasta: Add broken lasagna noodles. Simmer 15–20 minutes, stirring occasionally, until noodles are tender.
  6. Add Greens: Stir in spinach or kale during the last 5 minutes if using.
  7. Make Cheese Topping: In a bowl, mix ricotta, mozzarella, and Parmesan.
  8. Serve: Ladle soup into bowls and top with a spoonful of the cheese mixture. Garnish with fresh basil or parsley.

Notes

For a creamier soup, stir in a splash of heavy cream at the end. Add red pepper flakes for heat. Store leftovers without pasta for best texture.
