Ingredients
- 12 thin slices roast beef (or use cooked steak)
- 1 tablespoon olive oil or butter
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 4 oz cream cheese, softened
- 1 cup shredded provolone or mozzarella cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Optional: fresh parsley for garnish
Instructions
- Sauté the vegetables: Heat oil in a skillet over medium heat. Add peppers and onions. Cook until soft and lightly caramelized, about 6-8 minutes. Stir in garlic powder and black pepper.
- Make the filling: In a bowl, combine sautéed veggies with softened cream cheese and shredded cheese. Mix until fully blended.
- Fill and roll: Lay out roast beef slices. Spoon a portion of filling onto each slice. Roll tightly into a log shape.
- Bake: Preheat oven to 375°F (190°C). Place rolls seam-side down in a greased baking dish. Top with extra cheese if desired. Bake for 10-15 minutes or until heated through and cheese is melted.
- Serve: Garnish with chopped parsley and serve warm.
Notes
You can prep these rolls ahead and refrigerate them until ready to bake. For variation, try swapping in chicken or different cheeses like pepper jack or Swiss. To freeze, wrap unbaked rolls tightly and freeze for up to one month.
