  • 2 tablespoons fresh parsley, chopped (for garnish)
  • ¼ cup chicken broth or water (optional)

Instructions

  1. Season the Chicken: Pat chicken dry and season both sides with salt, pepper, and paprika.
  2. Cook Sweet Potatoes: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add sweet potatoes and cook 8–10 minutes until golden and tender. Remove and set aside.
  3. Sear the Chicken: Add remaining olive oil to skillet. Cook chicken 4–5 minutes per side until golden and cooked through.
  4. Add Garlic and Herbs: Lower heat slightly. Add garlic, rosemary, and thyme. Stir gently for 30 seconds.
  5. Combine: Return sweet potatoes to the skillet. Add broth if needed and toss together.
  6. Finish: Cook 3–5 minutes more. Garnish with parsley and serve warm.

Notes

Cut sweet potatoes evenly for even cooking. Avoid overcrowding the skillet to keep the chicken juicy. Add a squeeze of lemon juice before serving for extra freshness.
