Instructions
- Season the Chicken: Pat chicken dry and season both sides with salt, pepper, and paprika.
- Cook Sweet Potatoes: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add sweet potatoes and cook 8–10 minutes until golden and tender. Remove and set aside.
- Sear the Chicken: Add remaining olive oil to skillet. Cook chicken 4–5 minutes per side until golden and cooked through.
- Add Garlic and Herbs: Lower heat slightly. Add garlic, rosemary, and thyme. Stir gently for 30 seconds.
- Combine: Return sweet potatoes to the skillet. Add broth if needed and toss together.
- Finish: Cook 3–5 minutes more. Garnish with parsley and serve warm.
