Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 ¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 (3 oz) box Jello gelatin (any flavor)
- Optional: Extra sugar or Jello powder for rolling
Instructions
- Preheat the Oven: Set oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream Butter and Sugar: In a large bowl, beat softened butter and sugar until fluffy—about 2–3 minutes.
- Mix in Egg and Jello: Add the egg and beat until fully combined. Add the packet of Jello powder and continue mixing until the dough turns vibrant and colorful.
- Combine Dry Ingredients: In a separate bowl, whisk flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until a soft dough forms.
- Shape the Dough: Scoop dough into tablespoon-sized balls. Roll each in sugar or Jello powder, then place on the baking sheet and flatten slightly.
- Bake: Bake for 8–10 minutes until the edges are set. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
To create rainbow cookies, divide the dough and add a different Jello flavor to each section. Dough can be frozen ahead for baking later. For softer cookies, avoid overbaking and store them in an airtight container with a slice of bread to keep them moist.
