Ingredients
- 2 ribeye or sirloin steaks (about 1 inch thick)
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary or thyme (optional)
Instructions
- Prepare the Steak: Remove the steaks from the refrigerator 20–30 minutes before cooking. Pat dry with paper towels and season both sides generously with salt and black pepper.
- Heat the Pan: Heat a heavy skillet over medium-high heat. Add olive oil and allow it to heat until shimmering.
- Sear the Steak: Place the steaks in the hot skillet. Cook without moving for 3–4 minutes until a deep golden crust forms. Flip and cook the other side for another 3–4 minutes.
- Add Garlic Butter: Reduce heat slightly. Add butter, minced garlic, and herbs to the pan. Tilt the pan and spoon the melted garlic butter over the steaks for about 1 minute.
- Rest the Steak: Transfer steaks to a plate and let rest for 5 minutes before slicing. Spoon extra garlic butter on top before serving.
Notes
For best results, do not overcrowd the pan. Letting the steak rest after cooking is key to keeping it juicy. Use a meat thermometer if needed—135°F is perfect for medium-rare.
