Ingredients
- 4 medium russet potatoes, peeled and diced

Instructions
- Cook the Aromatics: In a large pot, heat butter or oil over medium heat. Sauté chopped onion for 3–4 minutes until softened. Add minced garlic and cook for 1 more minute.

- Season and Finish: Stir in thyme, salt, pepper, and optional cheese until melted. Adjust seasoning to taste.
- Garnish and Serve: Ladle into bowls and top with bacon, green onions, or more cheese. Serve warm with bread or crackers.
Notes
For a vegan version, use olive oil, vegetable broth, and plant-based milk. Blend fully for extra creaminess or leave chunky. Leftovers can be stored in the fridge for up to 4 days or frozen for 2 months. Reheat gently with added milk or broth if needed.
