Instructions

  1. Cook the Aromatics: In a large pot, heat butter or oil over medium heat. Sauté chopped onion for 3–4 minutes until softened. Add minced garlic and cook for 1 more minute.
  2. Add Potatoes and Broth: Stir in diced potatoes. Pour in chicken or vegetable broth. Bring to a boil, then reduce heat and simmer, covered, for 20–25 minutes or until potatoes are fork-tender.
  3. Blend (Optional): Use an immersion blender to puree the soup for a creamy texture, or mash some potatoes while leaving others whole for a chunkier feel.
  4. Stir in Milk and Cream: Add milk and heavy cream. Let it simmer on low for another 5 minutes. Do not boil.
  5. Season and Finish: Stir in thyme, salt, pepper, and optional cheese until melted. Adjust seasoning to taste.
  6. Garnish and Serve: Ladle into bowls and top with bacon, green onions, or more cheese. Serve warm with bread or crackers.

Notes

For a vegan version, use olive oil, vegetable broth, and plant-based milk. Blend fully for extra creaminess or leave chunky. Leftovers can be stored in the fridge for up to 4 days or frozen for 2 months. Reheat gently with added milk or broth if needed.
