  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan

Instructions

  1. Activate the Yeast: Mix warm water, yeast, and sugar in a small bowl. Let it sit 5–10 minutes until foamy.
  2. Make the Dough: In a large bowl, combine flour, salt, garlic powder, oregano, thyme, basil, and pepper. Stir in yeast mixture and olive oil until a sticky dough forms.
  3. Knead: On a floured surface, knead 8–10 minutes until smooth and elastic. Or use a stand mixer with dough hook for 5 minutes.
  4. First Rise: Place in an oiled bowl, cover, and let rise 1 hour until doubled in size.
  5. Shape: Punch down dough and spread into a greased baking pan. Cover and let rise again 20–30 minutes.
  6. Dimple and Top: Press fingers into the dough to make dimples. Brush with olive oil and sprinkle with cheeses and a pinch of salt.
  7. Bake: Bake at 400°F (200°C) for 20–25 minutes until golden brown. Cool slightly before slicing.

Notes

For extra flavor, add fresh rosemary, cherry tomatoes, or caramelized onions before baking. Don’t skimp on olive oil—it gives focaccia its signature crust and flavor. Freeze leftovers in slices for easy reheating.
