- 1–2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1 box cornbread mix (prepared according to package instructions)
Instructions
- Preheat the Oven: Heat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook the Meat: In a skillet over medium heat, warm olive oil. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
- Build Flavor: Stir in diced onion and garlic, cooking until softened, about 3 minutes.
- Season: Add chili powder, cumin, paprika, salt, and pepper. Stir to coat the meat evenly.
- Add Sauce and Veggies: Mix in tomato sauce, corn, and black beans. Simmer for 5–7 minutes until slightly thickened.
- Assemble the Pie: Spread the meat mixture evenly into the baking dish. Sprinkle shredded cheese over the top.
- Top with Cornbread: Prepare cornbread mix and pour evenly over the filling.
- Bake: Place dish in oven and bake for 25–30 minutes, until cornbread is golden and cooked through. Check with a toothpick in the center—if it comes out clean, it’s done.

Notes
