Ingredients

  • 1 (20 oz) package cheese ravioli (fresh or frozen)
  • 6 slices bacon, chopped
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon Italian seasoning or dried parsley
  • Reserved pasta water (as needed)
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Cook the Ravioli: Bring a large pot of salted water to a boil. Cook ravioli according to package directions until tender. Reserve 1 cup of pasta water, then drain and set aside.
  2. Cook the Bacon: In a large skillet over medium heat, cook chopped bacon until crispy. Remove bacon and place on paper towels. Leave about 1 tablespoon of bacon fat in the skillet.
  3. Make the Sauce: Reduce heat to medium-low. Add butter to the skillet, then stir in garlic and cook for about 30 seconds. Pour in heavy cream and season with salt, pepper, and Italian seasoning. Simmer gently for 5 minutes.
  4. Add Cheese and Bacon: Stir in Parmesan cheese until melted and smooth. Add most of the cooked bacon, saving some for topping.
  5. Combine: Add cooked ravioli to the skillet and gently toss to coat. Add reserved pasta water a little at a time if the sauce is too thick.
  6. Serve: Simmer for 2–3 minutes, then remove from heat. Garnish with remaining bacon and fresh herbs before serving.

Notes

Keep the heat low when making the sauce to prevent curdling. Do not overcook the ravioli, as they can break apart. This dish is best enjoyed fresh but can be reheated gently on the stove with a splash of cream or milk.
