Ingredients
- For the Crust:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 cup (2 sticks) unsalted butter, very cold and cubed
- 1/2 cup ice water (use as needed)
- For the Filling:
- 6 to 7 large apples (approx. 3 lbs), peeled, cored, and sliced 1/4 inch thick (use Granny Smith and Honeycrisp)
- 3/4 cup granulated sugar
- 2 tablespoons light brown sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/8 teaspoon salt
- 1 tablespoon butter, cut into small pieces
- For the Finish:
- 1 large egg whisked with 1 tablespoon milk (egg wash)
- 1 tablespoon coarse sugar for sprinkling (optional)
Instructions
- Prepare the Dough: Mix flour, salt, and sugar. Cut in cold butter until pea-sized crumbs form. Gradually add ice water until dough clumps. Wrap and chill for at least 1 hour.
- Macerate the Apples: Toss sliced apples with lemon juice, sugars, flour, and spices. Let sit for 20 minutes to release juices.
- Roll and Fill: Roll half the dough to 12 inches and place in a 9-inch pie dish. Add apple filling and dot with small butter pieces.
- Create the Lattice: Roll remaining dough and cut into 1-inch strips. Weave the strips over the apples in a cross-hatch pattern. Trim and crimp the edges to seal.
- Apply Egg Wash: Brush the lattice and edges with the egg wash and sprinkle with coarse sugar.
- Bake: Bake at 400°F for 20 minutes. Reduce heat to 375°F and bake for another 30-40 minutes until the crust is golden and filling is bubbly.
- Cool: Let the pie cool for at least 2 hours before slicing to allow the filling to set.
Notes
Use cold ingredients for the flakiest crust. If the edges brown too quickly, cover them with aluminum foil during the last 20 minutes of baking. Letting the pie cool completely is essential for clean slices.
