  • 4 medium potatoes, peeled and thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken/celery)
  • 1/2 cup milk (or broth or non-dairy milk)
  • 1 small onion, chopped (or 1 tsp onion powder)
  • 1 1/2 cups shredded cheddar cheese (or any melty cheese)
  • Salt and pepper to taste
  • Optional: garlic powder, frozen mixed veggies, parsley for garnish

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C).
  2. Cook the Ground Beef: In a skillet over medium heat, cook ground beef until browned. Season with salt, pepper, and optional garlic powder. Drain excess fat.
  3. Slice Potatoes: While the beef is cooking, peel and slice potatoes thinly and evenly. Soaking in cold water can help prevent browning.
  4. Make the Sauce: In a bowl, mix cream of mushroom soup and milk until smooth. Add a pinch of salt and pepper.
  5. Assemble the Casserole: In a greased 9×13” baking dish, layer half of the potatoes, then the cooked ground beef, then chopped onion (if using), followed by the rest of the potatoes.
  6. Pour the Sauce: Pour the soup mixture over the layers evenly.
  7. Bake: Cover with foil and bake for 35 minutes. Then remove foil, sprinkle cheese over the top, and bake uncovered for another 10 minutes or until bubbly and golden.
  8. Serve: Let rest for 5 minutes, then garnish with parsley if desired. Enjoy!
