- 1 ¾ cups white whole wheat flour
- 2 large eggs

- 1 teaspoon baking soda
- 1/2 teaspoon baking powder

Instructions
- Prepare: Roast sweet potatoes at 400°F until soft, then peel and mash smooth.
- Mix Dry: In a large bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Mix Wet: In a separate bowl, whisk puree, eggs, maple syrup, oil, yogurt, and vanilla.
- Combine: Gently fold wet ingredients into dry until just combined.
- Bake: Pour into a greased 9×5 loaf pan and bake at 350°F for 50-60 minutes.
- Cool: Rest in pan for 10 mins, then move to a rack.
Notes
Roasting the sweet potatoes provides a much more concentrated flavor. Resist the urge to over-stir the batter. Bread tastes even better the next day.
