Ingredients
- 2 boneless, skinless chicken breasts

- 2 cups fresh broccoli florets

- 2 cups cooked brown rice, white rice, or quinoa
- ½ cup plain Greek yogurt
- 2 tablespoons mayonnaise (optional)
- 2 cloves garlic, finely minced
- 1 tablespoon lemon juice

Instructions
- Marinate and Grill Chicken: Slice the chicken breasts in half horizontally for quicker cooking. Rub with olive oil, garlic powder, paprika, salt, and pepper. Let sit for 10–15 minutes. Grill over medium-high heat for 4–5 minutes per side or until cooked through. Let rest before slicing.
- Cook the Broccoli: Toss broccoli with olive oil and a pinch of salt. Roast at 425°F (220°C) for 15 minutes or steam until just tender and bright green, about 5–6 minutes.

Notes
