Description

  • 1 lb fresh green beans (trimmed and halved) or 2 cans (14.5 oz each) green beans, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 3/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup French fried onions, divided
  • Optional: 1/2 cup shredded cheddar cheese for a cheesy twist

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prep the Green Beans: If using fresh green beans, blanch them in boiling water for 4–5 minutes until tender-crisp. Drain and set aside. If using canned beans, rinse and drain well.
  3. Mix the Sauce: In a large bowl, combine the cream of mushroom soup, milk, salt, pepper, and cheese (if using). Stir until smooth.
  4. Combine: Add green beans and half of the French fried onions to the mixture. Stir until beans are evenly coated.
  5. Transfer and Bake: Pour mixture into a greased 8×8-inch baking dish. Bake uncovered for 25 minutes.
  6. Add the Topping: Carefully remove from oven and top with the remaining French fried onions. Return to oven and bake for an additional 5–10 minutes until the top is golden brown and bubbly.
  7. Serve: Let cool slightly and serve warm as a cozy side dish.

Notes

For a homemade touch, swap canned soup for a quick homemade mushroom sauce. To make ahead, assemble the casserole (without topping) the day before, refrigerate, and bake when ready—adding onions just before the final bake.
