Ingredients

- 1 whole garlic bulb (roasted)
- 2 tablespoons butter
- 2 tablespoons flour
- 1 ½ cups milk (any kind)
- ½ cup Parmesan cheese, grated
- 2 cups fresh spinach (or thawed frozen spinach, drained)
- 1 cup mozzarella cheese, shredded
- ½ cup feta cheese, crumbled
- ½ red onion, thinly sliced
- ½ cup kalamata olives, sliced
- 1 teaspoon dried oregano
- Olive oil for drizzling
- Fresh basil for garnish
Instructions
- Roast the Garlic: Preheat oven to 400°F (200°C). Slice the top off a garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30 minutes until soft. Cool, then squeeze out cloves.
- Make the White Sauce: In a saucepan, melt butter. Stir in flour to make a roux. Slowly whisk in milk until smooth. Add roasted garlic and Parmesan cheese. Cook until creamy.
- Prep Toppings: Lightly sauté spinach until just wilted. Slice onion and olives.
- Assemble the Pizza: Roll out dough on a floured surface. Spread garlic white sauce evenly. Top with mozzarella, spinach, onion, olives, and feta. Sprinkle oregano and drizzle with olive oil.
- Bake: Place in a preheated oven at 475°F (245°C) for 12–15 minutes until crust is golden and cheese is bubbling.
