  • 1 cup mozzarella cheese, shredded
  • ½ cup feta cheese, crumbled
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, sliced
  • 1 teaspoon dried oregano
  • Olive oil for drizzling
  • Fresh basil for garnish

Instructions

  1. Roast the Garlic: Preheat oven to 400°F (200°C). Slice the top off a garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30 minutes until soft. Cool, then squeeze out cloves.
  2. Make the White Sauce: In a saucepan, melt butter. Stir in flour to make a roux. Slowly whisk in milk until smooth. Add roasted garlic and Parmesan cheese. Cook until creamy.
  3. Prep Toppings: Lightly sauté spinach until just wilted. Slice onion and olives.
  4. Assemble the Pizza: Roll out dough on a floured surface. Spread garlic white sauce evenly. Top with mozzarella, spinach, onion, olives, and feta. Sprinkle oregano and drizzle with olive oil.
  5. Bake: Place in a preheated oven at 475°F (245°C) for 12–15 minutes until crust is golden and cheese is bubbling.
  6. Finish and Serve: Garnish with fresh basil before slicing and serving warm.
