Description

Tender, marinated Greek chicken wrapped in warm pita and topped with creamy cucumber tzatziki, fresh veggies, and bold Mediterranean flavors — perfect for lunch or dinner!


Ingredients

For the Chicken Marinade:

  • 1.5 lbs boneless, skinless chicken thighs or breasts

  • 3 tbsp olive oil

  • Juice of 1 lemon

  • 3 cloves garlic, minced

  • 1 tbsp plain Greek yogurt

  • 1 tsp dried oregano

  • 1 tsp ground cumin

  • 1 tsp paprika

  • Salt and pepper to taste

For the Cucumber Tzatziki:

  • 1 cup plain Greek yogurt

  • 1/2 cucumber, finely grated and drained

  • 1 tbsp olive oil

  • 1 clove garlic, minced

  • 1 tsp lemon juice

  • 1 tbsp chopped fresh dill (or 1 tsp dried)

  • Salt to taste

For Assembly:

  • 46 pita or flatbreads

  • Chopped lettuce

  • Sliced tomatoes

  • Sliced red onions

  • Crumbled feta cheese (optional)


Instructions

  • Marinate the Chicken:
    Combine all marinade ingredients in a bowl or zip-top bag. Add the chicken and marinate for at least 30 minutes, or up to 8 hours in the refrigerator.

  • Make the Tzatziki:
    Combine all tzatziki ingredients in a bowl. Mix well and refrigerate until ready to use.

  • Cook the Chicken:
    Heat a skillet or grill over medium-high heat. Cook the marinated chicken for 5–7 minutes per side, until fully cooked. Let rest for 5 minutes, then slice thinly.

  • Assemble the Gyros:
    Warm the pitas, then layer with lettuce, tomatoes, onions, sliced chicken, and a generous spoonful of tzatziki. Sprinkle with feta if desired.

  • Serve:
    Fold and serve immediately

 

Notes

  • For a lighter version, use grilled chicken breast and low-fat Greek yogurt.

  • Make it spicy by adding a pinch of chili flakes to the marinade.

  • These gyros can be made ahead and packed for lunch!
