  • ½ tsp ground cumin
  • Salt and pepper to taste
  • For the Tzatziki Sauce:
  • 1 cup Greek yogurt
  • ½ English cucumber, grated and squeezed
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill (or 1 tsp dried dill)
  • Salt to taste
  • For Assembly:
  • 46 pita breads
  • Sliced red onions
  • Sliced tomatoes
  • Shredded lettuce
  • Crumbled feta (optional)

Instructions

  1. Marinate the Chicken: In a bowl, whisk yogurt, olive oil, lemon juice, garlic, vinegar, oregano, cumin, salt, and pepper. Add chicken and coat well. Marinate in the fridge for at least 1 hour (up to overnight).
  2. Prepare Tzatziki Sauce: Grate and squeeze the cucumber to remove moisture. Mix with Greek yogurt, garlic, olive oil, lemon juice, dill, and salt. Chill until ready to use.
  3. Grill the Chicken: Heat a skillet or grill over medium-high heat. Cook chicken for 5–6 minutes on each side until fully cooked. Let rest for 5 minutes, then slice thinly.
  4. Assemble the Gyros: Warm pita bread slightly. Spread tzatziki over each pita. Add chicken, tomatoes, lettuce, onion, and feta. Wrap and serve immediately.

Notes

Marinate chicken overnight for deeper flavor. Use a grill pan for nice sear marks. For a low-carb version, serve in lettuce wraps instead of pita.
