Ingredients
- 2 large brioche buns
- 4 thick slices of back bacon or pancetta
- 2 large cold eggs
- 2 tablespoons unsalted butter, divided
- 1/4 cup finely grated parmesan or pecorino cheese
- 1 teaspoon crispy chili oil (optional)
- A pinch of sea salt and cracked black pepper
Instructions
- Toast the Buns: Slice buns in half. Melt 1 tablespoon of butter in a pan over medium heat and toast buns cut-side down for 2 minutes until golden. Set aside.
- Crisp the Bacon: In the same pan, cook bacon over medium-high heat for 3-4 minutes per side until deeply browned. Drain on paper towels.
- Fry the Egg: Lower heat to medium and add remaining butter. Gently crack eggs into the pan. Cook until whites are set but yolks remain runny. Season with salt, pepper, and a dot of chili oil.
- Assemble: Layer bacon on the bottom bun in an ‘X’ shape. Sprinkle with half the parmesan. Top with the fried egg and the top bun. Sprinkle remaining cheese over the plate for a gourmet finish.
Notes
Use cold eggs to help the yolk stay centered and jammy while the whites set. For the best texture, avoid reheating in the microwave as it makes the brioche soggy. If you don’t have parmesan, sharp cheddar or swiss cheese make excellent substitutions.
