  • 1 large round or oval crusty bread loaf (sourdough or artisan white)
  • 8 oz brie cheese, cut into small cubes (rind optional)
  • 3 tablespoons olive oil or melted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme or rosemary, finely chopped
  • 1 tablespoon fresh parsley, chopped (plus more for garnish)
  • ¼ teaspoon salt, or to taste
  • Optional: honey, red pepper flakes, or chopped nuts

Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C). Line a baking dish or sheet with parchment paper.
  2. Slice the Bread: Place the bread on a cutting board. Cut deep crisscross slices, making sure not to cut all the way through the bottom.
  3. Add the Brie: Gently pull the bread open and tuck pieces of brie into the cuts, spreading evenly throughout the loaf.
  4. Season: In a small bowl, mix olive oil or melted butter with garlic, herbs, and salt. Drizzle generously over the bread, letting it soak into the cuts.
  5. Bake: Place the bread in the prepared dish and bake for 20–25 minutes, until the bread is golden and the cheese is fully melted.
  6. Serve: Garnish with extra parsley and serve warm while the cheese is gooey and pull-apart.

Notes

Use room-temperature brie for easier handling and even melting. If the bread browns too quickly, loosely cover with foil. This dish is best served fresh and warm straight from the oven.
