These Golden Garlic Butter Parmesan Smashed Potatoes are crispy on the outside, soft on the inside, and packed with buttery garlic flavor. Ingredients
- 1½ pounds baby potatoes (Yukon gold or red potatoes work best)
- Salt, for boiling and seasoning
- 4 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- ½ teaspoon black pepper
- ¾ cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- Chopped fresh parsley or chives, for garnish (optional)
Instructions
- Boil the Potatoes: Place the potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook for 15–20 minutes, until fork-tender. Drain and let steam dry for a few minutes.
- Prepare the Garlic Butter: In a small bowl, mix the melted butter with minced garlic and black pepper.
- Smash the Potatoes: Arrange the potatoes on a parchment-lined baking sheet. Use the bottom of a glass or fork to gently smash each potato until flattened but still intact.
- Season and Bake: Brush the smashed potatoes with garlic butter and drizzle lightly with olive oil. Bake at 425°F (220°C) for 25–30 minutes, until crispy and golden.
- Add Parmesan: Sprinkle Parmesan cheese evenly over the potatoes and return to the oven for 5–7 minutes, until melted and lightly browned.
- Finish and Serve: Garnish with fresh parsley or chives and serve hot.
Notes
For extra crispiness, make sure the potatoes are dry before smashing. Use finely grated Parmesan for the best melt and crunch. These potatoes reheat best in the oven or air fryer to maintain their crispy texture.
