Instructions

  1. Prep the Oven: Preheat the oven to 350°F (175°C). Line a muffin pan with cupcake liners.
  2. Combine Dry Ingredients: In a bowl, whisk together flour, baking soda, baking powder, ginger, cinnamon, nutmeg, and salt.
  3. Cream Butter and Sugar: In a separate bowl, beat the butter and brown sugar until light and fluffy. Add the egg, molasses, and vanilla extract. Mix until smooth.
  4. Make the Batter: Add the dry mixture into the wet mixture, alternating with the milk. Mix until just combined.
  5. Fill and Bake: Scoop batter into cupcake liners, filling each about two-thirds full. Bake for 18–20 minutes or until a toothpick comes out clean. Let cool completely.
  6. Make the Frosting: Beat cream cheese and butter until creamy. Add powdered sugar gradually, then mix in vanilla until frosting is smooth and fluffy.
  7. Assemble: Pipe or spread the cream cheese frosting onto cooled cupcakes. Top with crushed gingerbread cookies or cinnamon sugar if desired.

Notes
