- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup cherries, pitted and halved (fresh, frozen, or canned and drained)
- 1/2 cup heavy cream (for ganache)
- 4 oz semi-sweet or dark chocolate, chopped (for ganache)
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Melt Chocolate: Melt butter and chocolate together until smooth. Let cool slightly.
- Mix Wet Ingredients: Stir sugar into chocolate mixture. Add eggs one at a time, then vanilla.
- Add Dry Ingredients: Gently fold in flour and salt until just combined.
- Add Cherries: Fold cherries evenly into the batter.
- Bake: Pour batter into pan and bake 30–35 minutes until center is just set.
- Cool: Allow brownies to cool completely.
- Make Ganache: Heat cream until warm. Pour over chocolate, rest 2–3 minutes, then stir smooth.
- Finish: Spread ganache over brownies and let set before slicing.
Notes
Do not overbake to keep brownies fudgy. Pat cherries dry before adding to avoid extra moisture. Chill brownies slightly for clean slices.
