This cherry sorbet is one of the easiest and most refreshing fresh cherry recipes you can make at home—no ice cream maker required. With just a handful of ingredients, it’s a dairy-free, naturally sweet treat that’s perfect for hot summer days.


Ingredients

Scale
  • 4 cups fresh cherries, pitted

  • 2 tablespoons lemon juice

  • 24 tablespoons honey or maple syrup (to taste)

  • 1/4 cup water

  • Optional:

    • 1/2 teaspoon vanilla extract

    • Pinch of salt

    • 1 tablespoon vodka (to prevent hard freezing)


Instructions

Step 1: Rinse and pit the cherries.
Step 2: Add cherries, lemon juice, sweetener, and water to a blender. Blend until smooth.
Step 3: Optional—strain through a fine mesh sieve for extra smooth texture.
Step 4: Pour into a shallow dish or loaf pan. Freeze for 3–4 hours. Stir with a fork every hour to prevent ice crystals.
Step 5: Once fully frozen, scoop into bowls and serve. Dip your scoop in warm water for clean, easy scoops.

Notes

  • Frozen cherries can be used—just thaw them first.

  • Taste before freezing to adjust sweetness.
