Description

This Pecan Pie Cheesecake is the ultimate holiday showstopper, combining a buttery graham cracker crust, velvety cream cheese filling, and a gooey, caramelized pecan topping. It is the perfect ‘no-fail’ solution for when you can’t decide between two classic desserts.

Ingredients

Scale
  • For the Crust:
  • 1.5 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1/2 teaspoon ground cinnamon
  • For the Filling:
  • 32 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream, room temperature
  • 1 tablespoon vanilla extract
  • 4 large eggs, room temperature
  • 2 tablespoons all-purpose flour
  • For the Pecan Topping:
  • 1/2 cup unsalted butter
  • 1 cup light brown sugar, packed
  • 1/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups pecan halves or chopped pecans

Instructions

  1. Prep the Crust: Mix crumbs, sugar, cinnamon, and melted butter. Press into a 9-inch springform pan and bake at 325°F for 10 minutes.
  2. Mix the Filling: Beat cream cheese and sugar until smooth. Add sour cream, vanilla, and flour. Mix in eggs one at a time on low speed.
  3. Bake in Water Bath: Wrap pan in foil and place in a roasting pan with 1 inch of hot water. Bake for 60-75 minutes.
  4. Cool Slowly: Turn off oven and crack the door for 1 hour before moving to the fridge to chill for 6+ hours.
  5. Make the Topping: Melt butter and brown sugar; whisk in heavy cream, vanilla, and salt. Stir in pecans and simmer for 2-3 minutes.
  6. Assemble: Pour slightly cooled topping over the chilled cheesecake before serving.

Notes

Ensure all dairy ingredients are at room temperature to prevent lumps. Use a water bath and slow cooling method to avoid cracks. For the cleanest slices, use a warm, wet knife and wipe it between every cut.
