  • 4 tablespoons softened butter
  • 1 1/2 cups powdered sugar
  • 1 cup graham cracker crumbs (or oat flour)
  • 1 teaspoon vanilla extract
  • 2 cups chocolate chips (milk, semi-sweet, or dark)
  • 1 tablespoon coconut oil (optional, for smoother chocolate)
  • Pinch of salt (optional)

Instructions

  1. Mix the Peanut Butter Filling: In a medium bowl, combine peanut butter, softened butter, powdered sugar, graham cracker crumbs, vanilla, and a pinch of salt. Stir until smooth and thick. Add more crumbs if the mixture feels too soft.
  2. Roll Into Balls: Scoop out tablespoon-sized portions and roll into smooth balls. Place on a parchment-lined tray.
  3. Chill the Balls: Freeze for 10–15 minutes to firm up before dipping.
  4. Melt the Chocolate: In a microwave-safe bowl, melt chocolate chips in 20–30 second intervals, stirring between each. Add coconut oil for extra shine.
  5. Dip the Balls: Remove peanut butter balls from the freezer and dip each one in melted chocolate using a fork. Let excess chocolate drip off, then place back on the tray.
  6. Set the Chocolate: Chill again for 10 minutes, or until the chocolate coating is firm.
