- Preheat and Prepare: Preheat oven to 375°F. Line a 10×15-inch jelly roll pan with parchment paper, leaving overhang for easy lifting.
- Mix Dry Ingredients: In a medium bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
- Whip Eggs and Sugar: Beat eggs and granulated sugar together until thick, pale, and creamy.
- Add Pumpkin: Stir in pumpkin purée and vanilla extract until smooth.

- Roll While Warm: Dust a clean towel with powdered sugar. Turn the warm cake onto the towel and roll from the short end. Allow to cool completely.
- Make Filling: Beat cream cheese, butter, powdered sugar, and vanilla until smooth and creamy.
- Assemble: Unroll the cooled cake, spread evenly with cream cheese filling, then roll back up without the towel. Trim ends if desired.
