Description

Ingredients

  • 1 cup warm water (about 100°F)
  • 1 packet (2¼ tsp) instant yeast (or active dry yeast, proofed in water 10 mins)
  • 1 tsp sugar

  • 2 tbsp olive oil (plus more for greasing)
  • 2–3 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)

Instructions

  1. Mix the Dough: In a large bowl, mix warm water, yeast, and sugar. Let sit 5–10 minutes until bubbly. Stir in flour, salt, and olive oil until a sticky dough forms.
  2. First Rise: Cover and let dough rise in a warm place for 45–60 minutes, until doubled in size.
  3. Prepare Muffin Tin: Grease a 12-cup muffin tin with olive oil. Spoon dough into cups, filling halfway.
  4. Add Toppings: Press garlic and rosemary into tops. Drizzle with olive oil. Add optional toppings if desired.
  5. Second Rise: Let filled muffin tin rest 15–20 minutes to puff slightly.
  6. Bake: Preheat oven to 375°F (190°C). Bake 20–25 minutes, until golden brown. Tap tops—if hollow, they’re done.
