These Easy Garlic Rosemary Focaccia Muffins take everything you love about classic focaccia bread—soft, fluffy insides, golden crusts, and rich flavor—and bake it up in a fun muffin form. Ingredients
- 2 cups all-purpose flour (substitute: whole wheat flour + extra water)
- 1 cup warm water (about 100°F)
- 1 packet (2¼ tsp) instant yeast (or active dry yeast, proofed in water 10 mins)
- 1 tsp sugar
- 1 tsp salt (sea salt for best flavor)
- 2 tbsp olive oil (plus more for greasing)
- 2–3 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
- Optional Toppings: shredded mozzarella or Parmesan, chopped olives, halved cherry tomatoes, caramelized onions
Instructions
- Mix the Dough: In a large bowl, mix warm water, yeast, and sugar. Let sit 5–10 minutes until bubbly. Stir in flour, salt, and olive oil until a sticky dough forms.
- First Rise: Cover and let dough rise in a warm place for 45–60 minutes, until doubled in size.
- Prepare Muffin Tin: Grease a 12-cup muffin tin with olive oil. Spoon dough into cups, filling halfway.
- Add Toppings: Press garlic and rosemary into tops. Drizzle with olive oil. Add optional toppings if desired.
- Second Rise: Let filled muffin tin rest 15–20 minutes to puff slightly.
- Bake: Preheat oven to 375°F (190°C). Bake 20–25 minutes, until golden brown. Tap tops—if hollow, they’re done.
- Cool & Enjoy: Let cool in tin 5 minutes, then transfer to rack. Serve warm or at room temperature.
