Easter Bunny Chow Recipe

  • Author: nakisha
  • Total Time: 28 minute
  • Yield: 8 servings 1x

Ingredients

Scale
  • 5 cups Rice Chex cereal
  • 1 cup white chocolate chips
  • 1/2 cup peanut butter (or almond butter for nut-free option)
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • 1 cup pastel-colored M&M’s
  • 1/2 cup mini marshmallows
  • 1/4 cup Easter sprinkles

Instructions

  • Melt the mixture: In a microwave-safe bowl, combine white chocolate chips, peanut butter, and butter. Microwave in 30-second intervals, stirring until smooth. Add vanilla extract and mix.
  • Coat the cereal: Place the Rice Chex cereal in a large mixing bowl. Pour the melted chocolate mixture over the cereal, gently stirring until evenly coated.
  • Add powdered sugar: Transfer the coated cereal to a large ziplock bag, add powdered sugar, and shake well until all pieces are coated.
  • Mix in add-ins: Pour the coated cereal into a bowl and let it cool. Once cooled, add pastel M&M’s, mini marshmallows, and sprinkles. Toss gently to combine.
  • Serve & Store: Enjoy immediately or store in an airtight container for up to a week.

Notes

  • Substitute peanut butter with almond butter or sunflower seed butter for an allergy-friendly version.
  • Store in an airtight container to keep it fresh longer.
  • Try adding crushed pretzels or coconut flakes for extra crunch!
