Instructions
- Melt the chocolate: In a microwave-safe bowl, melt the chocolate chips (and butterscotch chips, if using) in 30-second intervals, stirring in between, until smooth.
- Mix in noodles: Gently fold in the chow mein noodles (or shredded coconut) until evenly coated with melted chocolate.
- Shape the nests: Spoon small portions onto a parchment-lined tray, shaping them into nests with a slight indentation in the center.
- Add candy eggs: While the chocolate is still soft, place 2–3 mini candy eggs in the center of each nest.
- Let them set: Allow the cookies to cool and harden at room temperature or refrigerate for about 10–15 minutes.

- If the mixture is too thick, add 1 teaspoon of coconut oil to the melted chocolate for a smoother texture.
