Ingredients
- 1 to 1½ pounds kielbasa, sliced into rounds (or turkey sausage for a lighter version)
- 1½ pounds baby potatoes, halved
- 1 pound fresh green beans, trimmed
- 1 medium onion, sliced
- 3–4 garlic cloves, minced
- 1½ cups chicken broth (low sodium)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: ½ teaspoon smoked paprika or Cajun seasoning
Instructions
- Prepare Ingredients: Wash and halve baby potatoes, slice kielbasa, trim green beans, slice onion, and mince garlic.
- Layer in Crockpot: Add potatoes to the bottom of the crockpot, then layer green beans, onion, garlic, and kielbasa on top.
- Add Liquids and Seasoning: Pour in chicken broth and olive oil. Sprinkle with salt, pepper, and any additional seasonings.
- Slow Cook: Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until potatoes are fork-tender.
- Gently Stir and Serve: Mix gently before serving to distribute flavors evenly. Spoon into bowls and enjoy warm.
Notes
For extra flavor, brown the kielbasa in a skillet before adding to the crockpot. You can use frozen green beans—just add them during the last hour of cooking. Leftovers store well in the fridge for up to 4 days and reheat nicely on the stovetop or in the microwave.
