  • 1 to pounds kielbasa, sliced into rounds (or turkey sausage for a lighter version)
  • pounds baby potatoes, halved
  • 1 pound fresh green beans, trimmed
  • 1 medium onion, sliced
  • 34 garlic cloves, minced
  • 1½ cups chicken broth (low sodium)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: ½ teaspoon smoked paprika or Cajun seasoning

Instructions

  1. Prepare Ingredients: Wash and halve baby potatoes, slice kielbasa, trim green beans, slice onion, and mince garlic.
  2. Layer in Crockpot: Add potatoes to the bottom of the crockpot, then layer green beans, onion, garlic, and kielbasa on top.
  3. Add Liquids and Seasoning: Pour in chicken broth and olive oil. Sprinkle with salt, pepper, and any additional seasonings.
  4. Slow Cook: Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until potatoes are fork-tender.
  5. Gently Stir and Serve: Mix gently before serving to distribute flavors evenly. Spoon into bowls and enjoy warm.

Notes

For extra flavor, brown the kielbasa in a skillet before adding to the crockpot. You can use frozen green beans—just add them during the last hour of cooking. Leftovers store well in the fridge for up to 4 days and reheat nicely on the stovetop or in the microwave.
