Description
These Crispy Roasted Baby Potatoes are the ultimate side dish—golden on the outside, fluffy on the inside, and bursting with flavor. With just a few ingredients and less than an hour, you can have a crowd-pleasing recipe perfect for any meal.
Ingredients
Scale
- 1 ½ pounds baby potatoes (red, gold, or mixed)
- 3 tablespoons olive oil (or avocado oil for variation)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary or thyme (double if using fresh)
- Fresh parsley for garnish (optional)
Instructions
- Prep the Potatoes: Wash and pat dry the baby potatoes. If larger than a golf ball, cut them in half.
- Season Generously: In a large bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, and rosemary until fully coated.
- Arrange for Roasting: Preheat the oven to 425°F (220°C). Spread potatoes in a single layer on a baking sheet, cut side down if halved.
- Roast to Perfection: Roast for 25 minutes, flip, then roast another 15–20 minutes until crispy and golden. For extra crunch, broil for 2–3 minutes, watching closely.
- Serve and Garnish: Transfer to a serving dish, sprinkle with fresh parsley, and enjoy hot.
Notes
Dry the potatoes well before seasoning for maximum crispiness. Don’t overcrowd the baking sheet—space between potatoes ensures better browning. For extra flavor, add a sprinkle of parmesan in the last 10 minutes of roasting.
