  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili flakes (optional)
  • Fresh cilantro or Thai basil for garnish

Instructions

  1. Sauté the Aromatics: Heat oil in a large pot over medium heat. Add garlic and ginger, cooking for about 30 seconds until fragrant. Stir in the red curry paste and cook for another 30 seconds to deepen the flavor.
  2. Add the Broth: Pour in the chicken or vegetable broth. Stir well to dissolve the curry paste and bring the mixture to a gentle simmer.
  3. Add Coconut Milk: Stir in the coconut milk until smooth. Heat gently and avoid boiling too hard to prevent separation.
  4. Cook the Dumplings: Add the frozen dumplings directly to the pot. Cook for 6–8 minutes or according to package instructions, until tender and cooked through.
  5. Season: Add soy sauce or fish sauce, lime juice, and chili flakes. Taste and adjust seasoning as needed.
  6. Serve: Ladle the soup into bowls and top with chopped cilantro or Thai basil. Add extra lime for brightness if desired.

Notes

Use any dumplings you like—chicken, pork, veggie, or shrimp all work well. For a thicker broth, simmer the soup an extra few minutes. For extra greens, stir in spinach or bok choy at the end before serving.
