  • 8 oz pasta (fettuccine, linguine, or gluten-free alternative)
  • 2 tablespoons olive oil or butter
  • 1 small shallot or onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream (or full-fat coconut milk for vegan)
  • ½ cup vegetable broth
  • ¼ cup grated Parmesan (or nutritional yeast for vegan)
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Cook Pasta: Bring a pot of salted water to a boil. Cook pasta according to package instructions. Reserve ½ cup pasta water, then drain.
  2. Sauté Aromatics: Heat oil in a large skillet over medium heat. Add chopped shallot and cook until soft. Stir in garlic and cook for 30 seconds.
  3. Cook Mushrooms: Add oyster mushrooms and cook 5–7 minutes until browned. Avoid overcrowding the pan.
  4. Make Cream Sauce: Pour in vegetable broth and cream. Simmer 5–6 minutes until slightly thickened.
  5. Season and Add Cheese: Stir in Parmesan, salt, and pepper. Adjust consistency with reserved pasta water if needed.
  6. Combine: Add drained pasta to the skillet and toss to coat evenly. Garnish with parsley and serve warm.

Notes

For extra depth, add a splash of white wine before simmering the sauce. Truffle oil or lemon zest can also elevate the flavor. Store leftovers in an airtight container for up to 3 days and reheat gently with a splash of cream or water.
