- 6–8 bone-in, skin-on chicken thighs
- Salt and pepper, to taste
- 2 tablespoons olive oil or butter
- 4 cloves garlic, minced
- 1 small onion, diced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat and Season: Preheat the oven to 400°F (200°C). Pat chicken thighs dry and season both sides with salt and pepper.
- Sear Chicken: Heat olive oil or butter in a large oven-safe skillet over medium-high heat. Sear chicken thighs skin-side down for 4–5 minutes, flip and cook 2 more minutes. Remove and set aside.
- Sauté Aromatics: In the same pan, reduce heat to medium. Add garlic and onion, sauté until fragrant and soft, about 3 minutes.
- Make the Sauce: Add chicken broth, scraping up browned bits. Stir in cream, Parmesan, and Italian seasoning. Simmer for 2 minutes until slightly thickened.
- Combine and Bake: Return chicken to the pan, skin-side up. Spoon sauce over chicken and transfer the pan to the oven.
- Bake: Bake uncovered for 25–30 minutes, or until the internal temperature reaches 165°F (74°C).
- Serve: Remove from oven, garnish with chopped parsley, and serve hot.
Notes
For extra richness, add a handful of spinach or mushrooms to the sauce before baking. To lighten the dish, substitute Greek yogurt for cream. Pairs well with cauliflower mash, rice, or crusty bread.
