Instructions

  1. Cook the Potatoes: Add cubed potatoes to a large pot of salted water and bring to a boil. Cook until fork-tender, about 15–20 minutes. Drain and mash with butter and warm milk until smooth. Season with salt and pepper, then cover to keep warm.
  2. Sauté the Aromatics: In a large skillet, heat butter and olive oil over medium heat. Add onions and cook until soft and translucent, about 5 minutes. Stir in the garlic and cook for another 30 seconds.
  3. Cook the Mushrooms: Add mushrooms and let them cook without stirring for 2 minutes to brown. Then stir occasionally until golden and most of the moisture has evaporated.
  4. Build the Sauce: Sprinkle flour over the mushrooms and stir to coat. Slowly pour in the broth while stirring to avoid lumps. Add Dijon mustard, paprika, and Worcestershire sauce. Simmer for 5–7 minutes, until the sauce thickens.
  5. Make It Creamy: Reduce heat to low. Stir in the sour cream until smooth and silky, making sure not to let it boil. Season with salt and pepper to taste.
