Description

This Creamy Cucumber Bacon Salad is the perfect blend of cool, crisp cucumbers and smoky, crunchy bacon, all tossed in a luscious creamy dressing with a touch of dill. It’s a refreshing side that’s quick to prepare and always a hit at picnics, barbecues, or weeknight dinners.

  • 3 medium cucumbers, thinly sliced
  • 6 strips bacon, cooked and crumbled
  • 1/2 small red onion, thinly sliced
  • 1/2 cup sour cream (or Greek yogurt for a lighter version)
  • 1/4 cup mayonnaise (optional, or use more sour cream)
  • 1 tablespoon white vinegar or lemon juice
  • 1 tablespoon fresh dill, chopped (or 1 tsp dried dill)
  • Salt and black pepper to taste

Instructions

  1. Prep the Cucumbers: Wash and thinly slice cucumbers. Sprinkle lightly with salt and let sit for 10 minutes in a colander to release moisture. Pat dry with paper towels.
  2. Cook the Bacon: While cucumbers are resting, cook the bacon in a skillet or oven until crispy. Cool and crumble into small pieces.
  3. Slice the Onion: Thinly slice red onion. For a milder flavor, soak slices in cold water for 5–10 minutes, then drain.
  4. Make the Dressing: In a large bowl, mix together sour cream, mayonnaise, vinegar or lemon juice, dill, salt, and pepper until smooth and creamy.
  5. Assemble the Salad: Add cucumbers and onions to the bowl with the dressing. Gently toss to coat evenly. Fold in most of the bacon, reserving a little for garnish.
  6. Chill and Serve: Cover and chill the salad for 20 minutes before serving. Top with extra bacon and a sprinkle of fresh dill just before serving for added flavor and presentation.

Notes

For the crispiest texture, add bacon just before serving. This salad pairs well with grilled meats, sandwiches, or even eggs. To reduce calories, substitute Greek yogurt for sour cream and use turkey bacon or plant-based alternatives.
