  • 12 ounces (340g) wide egg noodles
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, chopped
  • 2 stalks celery, chopped
  • 2 large carrots, peeled and diced
  • 2 cloves garlic, minced
  • 1/4 cup (30g) all-purpose flour
  • 1/2 cup (120ml) chicken broth
  • 1/2 cup (120ml) milk
  • 1/2 cup (120ml) heavy cream
  • 2 cups (300g) cooked chicken, shredded or diced
  • 1 cup (150g) frozen peas
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh parsley for garnish

Instructions

  1. Cook the Noodles: Fill a big pot with 8 cups of water and 1 teaspoon of salt. Bring to a boil. Add the egg noodles and cook for 6-8 minutes until tender. Drain and set aside.
  2. Sauté the Veggies: In a large skillet, melt the butter over medium heat. Add the onion, carrots, and celery. Cook for 5-7 minutes until they are soft.
  3. Build the Flavor: Add the garlic and cook for 60 seconds. Sprinkle the flour over the veggies and stir for 2 minutes to make a roux.
  4. Make it Creamy: Slowly pour in the chicken broth, milk, and heavy cream while stirring. Simmer for 3-5 minutes until the sauce gets thick and smooth.
  5. Add Filling: Stir in the chicken, frozen peas, thyme, salt, and pepper. Let it heat through for 3 minutes.
  6. Combine: Toss the cooked noodles into the skillet. Stir until everything is coated in sauce. Add the cheese if you want it extra gooey. Garnish with parsley and enjoy!

Notes

You can use a rotisserie chicken to make this even faster. If the sauce is too thick, just add a little extra milk or broth. This recipe is very flexible, so feel free to add extra veggies like mushrooms or corn.
