Description

This Creamy Chicken and Gnocchi Soup is the ultimate comfort in a bowl. Made with tender chicken, pillowy gnocchi, and fresh spinach in a velvety cream broth, it’s hearty, cozy, and ready in under 40 minutes. Perfect for chilly nights or when you want a homemade meal that feels indulgent but easy.

Ingredients

Scale
  • 2 tablespoons butter
  • 1 small onion, diced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken (or rotisserie)
  • 16 oz potato gnocchi
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon thyme
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Sauté the Vegetables: Melt butter in a large pot over medium heat. Add onion, carrots, and garlic. Cook for 5 minutes until softened and fragrant.
  2. Make the Roux: Sprinkle flour over the veggies and stir constantly for 1 minute to remove the raw flour taste.
  3. Add Broth and Chicken: Slowly whisk in chicken broth until smooth. Add shredded chicken and bring to a gentle boil. Reduce heat and simmer for 10 minutes.
  4. Cook the Gnocchi: Stir in gnocchi, thyme, and Italian seasoning. Cook for 3–4 minutes or until the gnocchi floats to the top.
  5. Add Cream and Spinach: Reduce heat to low. Stir in heavy cream and fresh spinach. Simmer for 5 minutes until the soup thickens slightly and spinach wilts. Season with salt and pepper.
  6. Serve and Enjoy: Ladle into bowls and top with grated Parmesan or a drizzle of olive oil for extra richness.

Notes

For a lighter version, swap heavy cream with half-and-half or evaporated milk. Add crispy bacon or mushrooms for a smoky twist. This soup tastes even better the next day!
