Instructions

  1. Sauté the Vegetables: Heat butter and olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5-7 minutes. Add garlic, thyme, salt, and pepper during the last minute.
  2. Build the Broth: Pour in the chicken broth and bring to a gentle boil. Reduce heat to low to maintain a steady simmer.
  3. Add the Chicken: Stir in the shredded cooked chicken to warm it through.
  4. Mix the Dumpling Dough: In a medium bowl, whisk flour, baking powder, salt, and parsley. Gently stir in milk and melted butter until a soft dough forms. Do not over-mix.
  5. Drop and Steam: Drop rounded tablespoons of dough into the simmering broth. Cover with a lid and cook undisturbed for 12-15 minutes. Do not lift the lid!
  6. Finish and Serve: Remove the lid and stir in the heavy cream and frozen peas. Let sit for 2 minutes until the peas are heated through and the broth is creamy.
