Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the butter and sugars: In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
  3. Add wet ingredients: Mix in the egg, egg yolk, and vanilla extract until smooth.
  4. Combine dry ingredients: In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gradually add to the butter mixture until just combined.
  5. Fold in fun: Gently stir in rainbow sprinkles and optional white chocolate chips.
  6. Shape and bake: Scoop dough onto prepared sheets, flatten slightly, and bake for 10–12 minutes until edges are golden. Let cool completely.
  7. Make the frosting: Beat butter until smooth, add powdered sugar, vanilla, and cream, whipping until fluffy.
