Ingredients
- 4 cube steaks (or tenderized round steaks)
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- 2 large eggs
- 1/2 cup milk
- Vegetable oil for frying
- For the Gravy:
- 1/4 cup pan drippings (from frying)
- 1/4 cup all-purpose flour
- 2 cups whole milk
- Salt and freshly ground black pepper to taste
Instructions
- Set Up Breading Stations: In one bowl, mix the flour, garlic powder, onion powder, paprika, salt, and pepper. In a second bowl, whisk the eggs and milk.
- Bread the Steaks: Dip each cube steak in the flour, then the egg wash, then back into the flour. Press to coat well. Let rest 10 minutes.
- Pan Fry: Heat 1/4 inch of oil in a large skillet over medium heat. Fry steaks 3–4 minutes per side or until golden brown. Drain on paper towels.
- Make the Gravy: Remove all but 1/4 cup oil from the pan. Add 1/4 cup flour and cook 1–2 minutes. Slowly whisk in milk. Cook until thick and bubbly. Season with salt and lots of black pepper.
- Serve: Spoon gravy over steaks. Pair with mashed potatoes and your favorite veggie side.
Notes
For extra-crispy coating, press the flour into the steaks firmly before frying. If gravy is too thick, whisk in a splash of milk. Letting steaks rest before frying helps the breading stick better.
