Description
This Cottage Cheese Blueberry Cloud Bread is a light, fluffy, low-carb treat made with wholesome ingredients. With its protein-rich base and naturally sweet bursts of blueberries, it’s perfect for a healthy breakfast or snack. Quick to prepare and full of flavor, this cloud bread is as delicious as it is dreamy.
Ingredients
- 3 large eggs, separated
- 1/2 cup full-fat cottage cheese (low-fat optional)
- 1/4 teaspoon cream of tartar (or 1/2 tsp lemon juice)
- 1 tablespoon honey or maple syrup (optional)
- 1/2 teaspoon vanilla extract
- 1/4 cup fresh blueberries (or frozen, thawed and drained)
- Pinch of salt
Substitutions:
- Use Greek yogurt instead of cottage cheese for a smoother texture.
- Replace honey with a keto sweetener like monk fruit or erythritol to lower carbs.
- Try raspberries or chocolate chips instead of blueberries for variation.
Instructions
- Separate the Eggs: Crack eggs and place yolks in one bowl, whites in another. Ensure no yolk gets into the whites.
- Whip Egg Whites: Add cream of tartar to egg whites. Beat with a mixer until stiff peaks form.
- Mix Yolks and Cottage Cheese: In the yolk bowl, blend cottage cheese, vanilla, salt, and honey until smooth.
- Fold Carefully: Gently fold whipped whites into the yolk mix in batches. Do not overmix—keep it airy.
- Add Blueberries: Fold in blueberries gently, trying not to break them.
- Prepare to Bake: Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Spoon and Shape: Drop spoonfuls of batter (about 1/2 cup each) onto the tray, forming soft rounds.
- Bake: Bake for 25–30 minutes until golden and lightly firm. Cool slightly before serving.
Notes
These are best eaten warm but can also be enjoyed cold. For added flavor, dust with cinnamon or layer with almond butter and banana slices. Avoid overmixing the batter to maintain fluffiness. Use lemon zest for a refreshing twist.
