  • 1 teaspoon baking powder

  • 1 large egg

  • 2 tablespoons melted butter or oil
  • 1 1/2 cups corn kernels (fresh, frozen, or canned and drained)

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine flour, baking powder, baking soda, salt, and pepper. Stir well.
  2. Whisk Wet Ingredients: In a separate bowl, beat the egg. Add milk and melted butter, and whisk until combined.
  3. Combine Mixtures: Pour wet mixture into dry ingredients. Stir gently until just combined; don’t overmix.
  4. Fold in Corn: Add corn kernels, green onions, and cheese if using. Gently fold everything together.
  5. Heat Oil: Heat about 1/4 inch of oil in a skillet over medium heat until hot but not smoking.
  6. Cook Fritters: Drop spoonfuls of batter into the oil. Flatten slightly and cook 2-3 minutes per side until golden brown.
  7. Drain: Remove and place on paper towels to drain excess oil.
