- 1 cup crushed pineapple, drained (reserve 1 tbsp juice)
- 2 large eggs
- 1/3 cup melted coconut oil (or butter)
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp almond extract (optional)
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 3/4 cup shredded sweetened coconut, plus extra for topping
- Optional: 1/2 cup chopped pecans or walnuts
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
- Mix Wet Ingredients: In a large bowl, mash the bananas. Add crushed pineapple, reserved juice, eggs, coconut oil, sugars, vanilla, and almond extract. Stir until combined.
- Mix Dry Ingredients: In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and shredded coconut.
- Combine: Add the dry ingredients to the wet mixture. Stir just until combined. Fold in nuts if using.
- Bake: Pour into prepared loaf pan. Sprinkle extra coconut on top. Bake for 50–60 minutes, or until a toothpick comes out clean.
- Cool: Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
