Ingredients
- 2 medium apples (Granny Smith or Honeycrisp), peeled and cubed
- 2 cups all-purpose flour
- 1 cup granulated white sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk (whole, almond, or oat)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon cinnamon (for apples and swirl)
- For the Swirl: 1/2 cup light brown sugar mixed with 1 tablespoon cinnamon
- For the Streusel: 1/2 cup brown sugar, 1/4 cup flour, 3 tablespoons cold butter
- For the Glaze (Optional): 1 cup powdered sugar, 2 tablespoons milk
Instructions
- Prepare Your Tools: Preheat oven to 350°F and grease a 9×5 inch loaf pan.
- Prepare the Apples: Peel and cube apples into pea-sized bits. Toss with a little cinnamon and flour to prevent sticking.
- Mix the Wet Ingredients: Cream together softened butter and white sugar. Add eggs one at a time, then stir in milk and vanilla.
- Add Dry Ingredients: Slowly stir in flour, baking powder, and salt until just combined. Fold in the prepared apples.
- Create the Swirl and Assemble: Pour half the batter into the pan, sprinkle with half the cinnamon-sugar mix, and swirl with a knife. Repeat with the remaining batter and sugar.
- Add Streusel and Bake: Mix cold butter, flour, and brown sugar until crumbly. Sprinkle over the top. Bake for 50-60 minutes or until a toothpick comes out clean.
- Rest and Glaze: Cool in the pan for 10 minutes, then move to a wire rack. Drizzle with glaze if desired before serving.
Notes
Don’t over-mix the batter or the bread will be tough. Resist opening the oven door too early to prevent the middle from sinking. For a nutty crunch, add chopped walnuts or pecans to the streusel topping.
