Ingredients
- 2 cups all-purpose flour (use gluten-free blend if needed)
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup unsalted butter, melted
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar (for filling)
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Make the Crumb Mixture: In a bowl, mix flour, brown sugar, 1/2 cup granulated sugar, cinnamon, and salt. Stir in melted butter until crumbly. Reserve 1 cup of this mixture for the topping.
- Prepare the Base: Press the remaining crumb mixture into a greased 9×9-inch baking pan. Bake at 350°F (175°C) for 10 minutes to set.
- Make the Filling: In another bowl, beat cream cheese until smooth. Add 1/3 cup sugar, egg, and vanilla. Mix until creamy.
- Assemble: Spread cream cheese filling evenly over the baked crust. Sprinkle reserved crumb mixture on top.
- Bake: Bake for 25–30 minutes, until the top is golden and the filling is set.
- Cool and Slice: Let cool completely before cutting into bars.
Notes
Line the pan with parchment paper for easy removal. Don’t overbake—the filling should be just set. Store leftovers in the fridge for up to 5 days or freeze for longer storage.
