Ingredients

- 8 oz cream cheese, softened
- 3 tbsp powdered sugar
- 1 tsp vanilla extract (divided)
- 4 large eggs
- 1/2 cup whole milk (or almond/oat milk)
- 1 tbsp ground cinnamon (divided)
- 1/2 cup granulated sugar
- Butter or oil, for frying
Instructions
- Make the Filling: In a bowl, mix cream cheese, powdered sugar, and 1/2 tsp vanilla extract until smooth.
- Assemble the Sandwiches: Spread cream cheese filling on 4 slices of bread. Top with the other 4 slices to form sandwiches.
- Prepare the Custard: In a shallow dish, whisk eggs, milk, remaining 1/2 tsp vanilla, and 1/2 tsp cinnamon.
- Soak the Bread: Dip each sandwich in the custard, soaking both sides briefly.
- Cook the Toast: Heat butter or oil in a skillet over medium heat. Cook each sandwich for 3–4 minutes per side, until golden and crispy.
- Make Cinnamon Sugar: Mix remaining 1/2 tbsp cinnamon with granulated sugar in a plate or shallow bowl.
- Coat the Toast: While still warm, roll the cooked French toast in the cinnamon sugar mixture to coat evenly.

Notes
