Description

This Churro Stuffed French Toast is the ultimate breakfast treat! Thick slices of bread are filled with sweet cream cheese, dipped in a cinnamon-vanilla egg custard, pan-fried until golden, then rolled in a crispy cinnamon sugar coating—just like your favorite churro, but better. It’s easy to make and absolutely perfect for brunch or a special morning surprise.

Ingredients

Scale
  • 8 slices thick-cut bread (like brioche or Texas toast)
  • 8 oz cream cheese, softened
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract (divided)
  • 4 large eggs
  • 1/2 cup whole milk (or almond/oat milk)
  • 1 tbsp ground cinnamon (divided)
  • 1/2 cup granulated sugar
  • Butter or oil, for frying

Instructions

  1. Make the Filling: In a bowl, mix cream cheese, powdered sugar, and 1/2 tsp vanilla extract until smooth.
  2. Assemble the Sandwiches: Spread cream cheese filling on 4 slices of bread. Top with the other 4 slices to form sandwiches.
  3. Prepare the Custard: In a shallow dish, whisk eggs, milk, remaining 1/2 tsp vanilla, and 1/2 tsp cinnamon.
  4. Soak the Bread: Dip each sandwich in the custard, soaking both sides briefly.
  5. Cook the Toast: Heat butter or oil in a skillet over medium heat. Cook each sandwich for 3–4 minutes per side, until golden and crispy.
  6. Make Cinnamon Sugar: Mix remaining 1/2 tbsp cinnamon with granulated sugar in a plate or shallow bowl.
  7. Coat the Toast: While still warm, roll the cooked French toast in the cinnamon sugar mixture to coat evenly.
  8. Serve: Slice and serve warm. Optional toppings: fresh berries, whipped cream, or maple syrup.

Notes

Use thick bread to avoid sogginess. For extra flavor, add a little orange zest to the filling. Avoid oversoaking the bread to maintain texture. Cook over medium heat to prevent burning while ensuring the custard sets inside.
