These Churro Cheesecake Cookies are soft, warm, and filled with a creamy cheesecake center. Rolled in cinnamon sugar for the perfect churro flavor, they bake up golden on the outside and rich on the inside. - 4 oz cream cheese, softened
- 3 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- Cookie Dough:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- Cinnamon Sugar Coating:
- 1/3 cup granulated sugar
- 1 tablespoon cinnamon
Instructions
- Prepare the Cheesecake Filling: In a small bowl, mix cream cheese, sugar, and vanilla until smooth. Scoop small portions onto parchment and freeze for 10–15 minutes.
- Make the Cookie Dough: Beat butter, granulated sugar, and brown sugar until creamy. Add egg and vanilla and mix. In a separate bowl, whisk flour, baking soda, cinnamon, and salt. Add dry ingredients to wet and mix until a soft dough forms.
- Shape the Cookies: Flatten a scoop of dough into your hand. Place a frozen cheesecake ball in the center and wrap dough around it. Seal edges well.
- Coat in Cinnamon Sugar: Roll each filled dough ball in the cinnamon-sugar mixture.
- Bake: Preheat oven to 350°F (175°C). Place cookies on a lined baking sheet and bake 10–12 minutes until lightly golden. Allow to cool slightly before serving.
Notes
For best results, freeze the cheesecake filling before assembling. Make sure the cookie dough fully seals the filling to prevent leaks. Serve warm for the softest, creamiest center.
