Instructions

  1. Prepare the Crust: Preheat oven to 325°F (160°C). Mix chocolate cookie crumbs, sugar, and melted butter in a bowl until combined. Press into the bottom of a 9-inch springform pan and bake for 8–10 minutes. Cool completely.
  2. Make the Filling: Beat cream cheese until smooth, then add sugar and mix well. Add sour cream and vanilla extract. Blend in melted chocolate, then add eggs one at a time, mixing on low speed. Do not overmix.
  3. Bake the Cheesecake: Pour filling over crust. Wrap the pan in foil, place in a larger baking dish, and fill the outer dish with hot water halfway up the sides. Bake for 55–65 minutes until the center is almost set. Turn off oven and let the cheesecake cool inside for 1 hour.
  4. Chill: Remove cheesecake from oven and cool to room temperature. Cover and refrigerate for at least 4 hours or overnight for best results.
  5. Prepare the Strawberry Topping: In a saucepan, combine strawberries, sugar, cornstarch, water, and lemon juice. Cook over medium heat until thickened and glossy, about 7 minutes. Let cool completely.
  6. Assemble: Spread cooled strawberry topping over chilled cheesecake. Decorate with whipped cream, chocolate shavings, or extra strawberries.
