  • 2 tablespoons mini chocolate chips
  • ¼ cup additional toffee bits

Instructions

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). Line a 12-cup muffin pan with liners or spray with non-stick spray.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. Mix Wet Ingredients: In another bowl, whisk eggs, granulated sugar, brown sugar, vanilla, oil, coffee, and buttermilk until smooth.
  4. Combine: Pour wet ingredients into the dry mixture and stir gently until just combined—don’t overmix.
  5. Fold in Add-ins: Gently stir in chocolate chips and toffee bits.
  6. Fill Muffin Tins: Divide batter evenly among muffin cups. Sprinkle with topping mix if using.
  7. Bake: Bake for 20–25 minutes or until a toothpick inserted comes out mostly clean.
  8. Cool: Let cool in the pan for 5 minutes, then transfer to a wire rack.
